I’ve been thinking a lot lately about the dinner decision. Not the cooking part — the deciding part. You know the one: standing in front of the fridge at 5:45, Biscuit watching my hands, and the slow spiral of “what do we have, what do we want, what’s not been made in three weeks.” This week I finally stopped improvising and just planned five dinners in one sitting. They’re all doable on a tired Tuesday, and they don’t all need the same three vegetables.
The whole week on one page: Butter Chicken Meatballs on Monday, Spaghetti alla Nerano on Tuesday, creamy peri-peri baked chicken on Wednesday, Chicken Noodle Soup on Thursday, and Smashed Burger Tacos to close out the week on Friday. I’ve also left room for seasonal swaps, because a soup in midsummer is a very different conversation than a soup in November.

Before you get to the five dinners, one housekeeping note: there’s a completed shopping list at the end of this post. It covers dinner only — breakfast and lunch are up to you — but there’s blank space in it for anything else you want to slip in. I find that one extra line at the bottom saves me a second trip more often than you’d think.
Monday: Butter Chicken Meatballs
The first thing I want to say is that these are comfort food that isn’t heavy — exactly what I want when the kitchen is already warm and I don’t want the meal to sit on me for a day. They’re also my favorite thing on this list to make ahead.
Here’s the trick that makes them meal-prep friendly: shape the meatballs, freeze them raw on a tray, then drop them straight into the butter chicken sauce to poach. You can also air fry them from frozen and add them to the sauce that way. Either route works, and both of them mean Monday is a 20-minute assembly, not a full cook.
I serve them the same way we always eat a curry: rice on the side, and naan or roti if I have some. If not, the rice is enough.

Tuesday: Spaghetti alla Nerano
This is the one I make when I want dinner to feel like an occasion without actually being one. It’s a showstopper pasta dish — the kind that makes whoever you’re feeding it stop and stare — and it comes together fast. The surprising part is the creaminess: there is no cream in it at all.
I keep coming back to the fact that this is Stanley Tucci’s favorite pasta dish. It’s good enough for him, so it’s good enough for me. Garlic bread and a quick arugula salad turn it into a casual feast, but it’s completely fine on its own.

Wednesday: Creamy Peri-Peri Baked Chicken
Wednesday is where I lean on the fridge. Season the chicken, cover it, and it’s good to go in the refrigerator for up to 2 days. That’s the whole meal-prep move: the seasoning happens when I’m not in a hurry, and the cooking happens on the day.
Cooked chicken and rice keep for up to 3 days in a airtight containers, so Wednesday also quietly becomes Thursday lunch. I eat the chicken and rice on their own, but a quick chopped salad next to it is my favorite side.

Thursday: Chicken Noodle Soup
By Thursday I usually want something warm that doesn’t require thinking, and this soup is it. Nobody in this house can resist it — the creamy, delicious kind that a 2-year-old and a middle-school teacher can both agree on. That’s a high bar.
Two things make this one work as a weeknight staple. First, it makes great leftovers: make the soup, leave the pasta out, and it keeps in the fridge for days, ready to become an easy lunch. The soup without the pasta also freezes really well, which I keep meaning to use more. Second, it’s a meal on its own, though crusty bread next to a bowl of it is a small joy I don’t want to skip.
One seasonal note: if you’re deep in summer and the last thing you want is soup, swap this one for a grilled or barbecue chicken instead. The slot in the week still works; the dish just changes with the temperature.

Friday: Smashed Burger Tacos
Friday night I don’t have energy for fuss, and these tacos know that. They come together quickly and give you all the same satisfaction a Big Mac would, with about half the calories. That’s not a small thing on a Friday.
Here’s the make-ahead tip I actually use: season the beef, portion it into balls, and freeze them in a bag. Thaw them on Friday morning, smash them onto the tortillas right before cooking, and dinner is nearly done. The burger sauce can also be made days in advance, which means Friday’s real work is just the smashing.

The Shopping List
Everything for the five dinners above is gathered in the shopping list at the end of this post. Again, it’s dinner-only, with room to add whatever else you need. I keep a printed copy by the fridge so it’s the first thing I grab on the way out the door.
That’s the week. Five dinners, one list, no last-minute panic. If I can make these on a Tuesday, they’re keepers — and these are the ones I’d make again without thinking. Which one are you trying first? Tell me in the comments, because I always want to know what actually gets eaten.
A note from Nora: I’ve been honest with you before, and I’ll be honest here — the meatballs are the only dish on this list where I’d recommend the make-ahead route, because freezing them raw is the difference between a 20-minute Monday and a 45-minute one. The rest are simple enough to cook fresh on the day. And if the Nerano pasta impresses you, save it for the first dinner you ever cook for someone new to your table. It does the heavy lifting so you don’t have to.
